在多数食用菌生产、菌种培养基配方中都有石灰。一般用生石灰,加少量水反应生成成熟石灰。料中加入的石灰宜用新生的熟石灰,不用建筑用熟石灰,是因为这样的石灰中含杂质较多。石灰是溶解蛋白质的消毒剂,不分杂菌种类,一律都是杀灭对象,石灰的浓度越大,灭菌效果越好。精料是杂菌滋生的主要场所,因此要重点做好精料的杀菌。一般做法是,先用较少的水与石灰混合成石灰乳,拌入精料。闷一定时间,再拌入全部料并添足水分。然后再用发酵、锅蒸方法使石灰发生化学变化,料的pH值随之下降,使之适于食用菌生产。
