在不同pH的提取条件下研究了料液比、温度、时间对火麻仁蛋白质提取效率的影响,结果表明,pH为9.5和11的提取条件下3个单因素的影响趋势相同,但pH为11的提取率均大于9.5的提取率。对2种pH条件下的蛋白质提取进行了正交试验优化,发现pH为9.5时的提取率较pH为11时的低,但是质量更好。因此采用2次浸提的方式,先按照pH为9.5时的最优工艺进行提取,再采用pH为11的最优工艺进行提取,不仅提取率最高,达到了85.97%,得到的蛋白质颜色纯白,质量更好。
The effects of solid-to-liquid ratio, temperature and time on the extraction efficiency of hemp protein were studied under different pH conditions. The results showed that the influence of three single factors under the extraction conditions of pH 9.5 and 11 was the same, but the pH was 11 extraction rate is greater than 9.5 extraction rate. Orthogonal experiments were carried out to optimize the protein extraction under two pH conditions. It was found that the extraction rate at pH 9.5 was lower than that at pH 11, but the quality was better. Therefore, the extraction method using two times, first according to the pH of 9.5 when the optimal extraction process, and then use the optimal pH of 11 for extraction, not only the highest extraction rate reached 85.97%, the resulting protein color white ,better quality.
