对饮食与胆固醇结石(CS)的关系国内外已有较多的研究。关于胆色素结石(PS)的成因,以往认为与胆道感染,胆汁郁积等因素有关;但近年来的一些研究表明,饮食中某些成分(尤其是蛋白质和脂肪)对 PS 的形成亦具有十分重要的影响,本文拟对此进行初步的讨论。流行病学研究四十年代,日本人的胆石症中60~80%为 PS。近年来,日本的 PS 发病率已明显减少,而 CS 则显著增多,并且逐渐成为主要的胆石类型,Matsushi-ro 报告占85%以上。这一变化趋势可归因子日本人生活方式的改变,特别是与饮食成分的改变有关。
