目的分析安徽省省级卫生直管餐饮单位食具卫生监测结果,探索保障食具卫生安全的有效措施。方法依据中华人民共和国国家标准GB14934-94《食(饮)具消毒卫生标准》,对1999~2003年安徽省级直管单位食具样品进行监测分析。结果安徽省级直管单位的食具消毒合格率近年来由95.81%上升到99.16%,达到平均97.01%的较高水平。结论在对餐饮单位卫生直管过程中,已取得保障食具卫生安全的一些成功经验,如从业人员卫生和法律意识的建立,卫生知识培训以及消毒设施和方法的选用等。这些经验可在全省范围内推广。
Objective To analyze the hygienic monitoring results of utensils in provincial-level straight-line catering units in Anhui Province and explore effective measures to ensure the hygienic safety of utensils. Methods According to the national standards of People’s Republic of China GB14934-94 “food (drinking) with disinfection health standards”, Anhui Province 1999-2003 straight tube unit utensils sample monitoring and analysis. Results Anhui province straight tube units of food disinfection pass rate in recent years increased from 95.81% to 99.16%, an average of 97.01% higher level. Conclusions In the direct management of catering units, some successful experiences have been obtained in ensuring the hygiene and safety of food utensils, such as the establishment of health and legal awareness of practitioners, the training of hygiene knowledge and the selection of disinfection facilities and methods. These experiences can be promoted across the province.
