从冰箱拿出冰冻的鱼,使其融化烹饪,用热水还是冷水化冰,哪一个更快?人们会自然认为热水更快一些,这个不难理解,热水和冰的温差大一些,更利于热的传递,短时间里冻鱼可以吸收更多的热量,完成熔化过程.但实际情况是用冷水效果更好,用时反而最短,与我们的想象迥异.为什么会出现这样的情况呢,很多学者从不同角度试图解释这一问题,笔者查阅多种有关资料,对提出的解释意见,认为没有切中要点,没有让人相信的说服力,下面就该问题阐述笔者的见解.
