日本人的人均年蔬菜消费量约110公斤(意大利约155公斤,法国约110公斤,美国约95公斤),排在高水准国家行列内。自给率除洋葱等部分蔬菜品种外,也接近100%。日本的蔬菜生产与消费结构相当稳定。然而,近20年蔬菜主要品种间产量的增减明显不同。在日本,许多中国蔬菜新品种获得了广泛普及,本地品种正在加快消亡。就是说,其生产和消费内容已经起了相当大变化。
Japanese people consume about 110 kilograms of vegetables per year (Italy, about 155 kilograms, France about 110 kilograms, the United States about 95 kilograms), ranked in the high standard of national ranks.
