[目的]为了解海产品甲醛本底含量及污染状况,以及不同处理方法对甲醛含量的影响。[方法]2003年2月至2003年12月在烟台市4处鱼港采集刚上岸海产品4类9种218份,市场采集亚硫酸品红定性阳性海产品17份。用乙酰丙酮法对样品甲醛含量进行了测定。[结果]海产品甲醛本底含量,均值为2.177mg/kg。从市场采集17份甲醛定性阳性海产品甲醛含量为6.12~2360mg/kg,平均159.887mg/kg;近海海水及远海海水各采集10份,均未检出甲醛。[结论]海产品存在甲醛本底,本研究为制定海产品中甲醛安全限量标准及食品卫生执法提供科学依据。
[Objective] The research aimed to understand the formaldehyde content and pollution status of seafood and the effect of different treatment methods on formaldehyde content. [Method] From February 2003 to December 2003, 218 species of 9 species and 4 types of freshly arrived marine products were collected from 4 fish farms in Yantai City. 17 samples of qualitatively positive sulphite malachite products were collected. The formaldehyde content of the sample was determined by acetylacetone method. [Result] The content of formaldehyde in seafood was 2.177mg / kg. Formaldehyde content of 17 positive formaldehyde samples collected from the market was 6.12 ~ 2360mg / kg, with an average of 159.887mg / kg. Formaldehyde was not detected in all the offshore and offshore seawater samples. [Conclusion] There was a formaldehyde background in seafood. This study provided a scientific basis for formulating safety standards for formaldehyde in seafood and enforcing food hygiene.
