沙门菌是一种常见的食品污染物并导致食源性细菌疾病的病原体。由于缺乏有效的免疫预防措施,严格的生物安全是排除疾病的唯一选择。本文综述细菌培养法、免疫学方法、环介导等温扩增技术、聚合酶链反应(PCR)技术和基质辅助激光解吸电离飞行时间质谱法等检测沙门菌的方法,着重介绍PCR技术在国内外的应用现状。 Salmonella is a common food contamination and causes pathogens of food borne bacterial disease. Due to the lack of effective immunoprophylaxis, strict biosecurity is the only option to rule out the disease.
