我久想寫一篇新甘味料的報告,和讀者談談最近數年來在這方面的進步。人類之用蔗糖(Stcrose),大約已有千餘年以上之歷史,不過古時因產量甚少,價格极貴,民间視为珍品。自工業技術進步,改用機器製糖以後,產量大增,價格日落,大众漸能普遍享受。據糖業統計,一八四六年全世界產量不過一百甘四萬噸,而一九三○年已增至二千八百萬噸,超過廿二倍以上,進步不可謂不速。但時代進步
I have long wanted to write a report on new sweet and savory materials and talk to readers about the progress made in recent years in this area.
