近二十年来,社会的进步和经济的发展给食品安全带来了许多新的挑战。该文概述了在食品化学、食品微生物学、食品安全毒理与保健食品功能学、食品卫生监督管理四个方面的研究进展,总结了该学科在开展食品污染物与食源性致病菌监控技术的研究、食品营养与功能成分及功能学的研究、食品安全关键技术在食品卫生管理中的应用研究等方面的工作进展,并展望了福建省食品卫生学科的发展趋势。
In the past two decades, social progress and economic development have brought many new challenges to food safety. This paper summarizes the research progress in the four aspects of food chemistry, food microbiology, food safety toxicology and health food function, food hygiene supervision and management, summarizes the subject in the food contaminants and foodborne pathogens monitoring Technical research, food nutrition and functional components and functional studies, application of key technologies of food safety in food hygiene management and so on. The development trend of food hygiene in Fujian Province is also prospected.
