B族维生素中的维生素B_1、B_2是人体许多辅酶的组成部分,有增进食欲,促进生长之功效。缺乏时可引起物质代谢障碍,从而出现维生素B_1、B_2缺乏症(区慧清1983,陈学存1984)。广东人民是以大米为主要粮食,因而研究广东大米维生素 B_1、B_2的含量在品种间或品种类型间的差异,探索影响其含量的因素,为改良稻米品种的营养成分,对改善人们的营养,提高健康水平是有现实意义的,并进一步为开发利用现有稻米的维生素 B_1、B_2营养品质提供科学依据。

In order to improve the nutrition of rice varieties and improve people’s nutrition, The health level is of practical significance and further provides scientific basis for developing and utilizing the nutritional qualities of the existing vitamins B_1 and B_2 in rice.
