木鳖果Momordica cochinchinensis(Lour.)Spreng.为葫芦科苦瓜属多年生草质藤本果树,近年来,因其果实富含类胡萝卜素等功能性成分而备受关注。本文对木鳖果整个生长发育期的生物学性状进行了详细的观察和描述,发现花后60d左右是果实色素积累的关键期。此外,利用高效液相色谱对成熟果中主要类胡萝卜素的成分、含量及其分布规律进行检测和分析。结果显示,木鳖果中检测到的类胡萝卜素总含量为(7 504.28±615.43)μg/g,以番茄红素和β-胡萝卜素含量最高,且主要集中在果皮和假种皮。据统计,果皮中番茄红素和β-胡萝卜素的含量分别为(1 236.51±254.83)μg/g、(1 004.32±235.93)μg/g;而假种皮中番茄红素和β-胡萝卜素的含量分别为(1 343.98±96.87)μg/g、(728.94±206.99)μg/g。因而,该果实可成为我国消费者摄取类胡萝卜素的有效来源之一。
Momordica cochinchinensis (Lour.) Spreng is a perennial gracile vines fruit of Cucurbitaceae. In recent years, it has drawn much attention because of its rich functional components such as carotenoids. In this paper, the biological characteristics of Momordica whole growth and development were observed and described in detail, and it was found that about 60 days after anthesis fruit pigment accumulation is the key period. In addition, the composition, content and distribution of major carotenoids in mature fruits were detected and analyzed by high performance liquid chromatography. The results showed that the total content of carotenoids detected in the wood turtle fruit was (7 504.28 ± 615.43) μg / g, with the highest contents of lycopene and β-carotene, and mainly concentrated in the pericarp and aril. According to statistics, the contents of lycopene and β-carotene in the peel were (1 236.51 ± 254.83) μg / g and (1004.32 ± 235.93) μg / g, respectively. The contents of lycopene and β-carotene (1 343.98 ± 96.87) μg / g and (728.94 ± 206.99) μg / g, respectively. Thus, the fruit can become one of the most effective sources of carotenoids for consumers in our country.
