本文通过对40个山楂品种(系)的理化指标检测和制汁过程中各主要成分提取率的比较以及果汁感观指标的评定,初步筛选出昌图秋里红、长果山楂、秋丰、朝阳亮一、朝阳亮三、河北隆化粉肉、豫8001,和开原红为较理想的制汁品种,其中昌图秋里红还可作为调色品种,秋丰可作为强化Vc的品种,而山西晋县大红山楂,王村实生,“8102”、田生山楂,大红子(835)蒙阳半野生小金星和“8104”等品种(系)不适于制汁。
