对不同生长发育阶段及采后贮藏过程中香菇不同部位的甲醛及γ-谷氨酰转肽酶和半胱氨酰亚砜裂解酶的酶活进行测定,结果表明在香菇不同生长阶段,菇柄中甲醛含量和γ-谷氨酰转肽酶、半胱氨酰亚砜裂解酶酶活高于菇盖。γ-谷氨酰转肽酶和半胱氨酰亚砜裂解酶酶活均在香菇五成熟阶段达到最高值,甲醛含量在香菇七成熟阶段达到最高值。采后贮藏过程中,鲜香菇中甲醛含量和γ-谷氨酰转肽酶、半胱氨酰亚砜裂解酶酶活呈先升高后降低的趋势,并且菇柄中甲醛含量、γ-谷氨酰转肽酶酶活高于菇盖,菇盖半胱氨酰亚砜裂解酶酶活高于菇柄。不同贮藏期,香菇烘干后甲醛含量逐渐降低,实验结果表明:在香菇生长发育阶段及采后贮藏过程中,γ-谷氨酰转肽酶和半胱氨酰亚砜裂解酶酶活影响甲醛的生成。烘干前菇体内积累的甲醛含量越高,烘干后干制品中的甲醛含量越低。
The enzyme activities of formaldehyde, γ-glutamyl transpeptidase and cysteinyl sulfoxide lyase in different growth stages and post-harvest storage were determined. During different storage periods, the content of formaldehyde in dried shiitake gradually decreased. The experimental results showed that the activity of γ-glutamyl transpeptidase and cystathionine lyase in the growth and development of shiitake mushrooms and formaldehyde Generated.
