柚果实贮藏30d后,果皮组织中超氧化物歧化酶(SOD)、过氧化物酶(POD)及纤维素酶均有一个活性高峰,随后日趋下降。丙二醛(MDA)含量随贮藏时间延长而增加,贮藏30d后急剧上升,伴随发生汁胞粒化现象。经溶融状态冰水冷激处理1~2.5h后,果皮中SOD活性保持较高水平,POD活性峰推迟一个月出现,且保持较低水平,纤维素酶活性在贮藏前期较低,60d后保持较高水平,丙二醛含量变化较平缓。冷激处理果实汁胞粒化现象推迟出现,发生程度较轻。
Pomelo fruit stored for 30 days, the pericarp superoxide dismutase (SOD), peroxidase (POD) and cellulase activity peak, and then declining. Malondialdehyde (MDA) content increased with the prolongation of storage time. After storage for 30 days, the content of malondialdehyde (MDA) increased sharply with the occurrence of granulation of juice. After ice cold water shock treatment for 1 ~ 2.5h, the activity of SOD in the pericarp maintained a high level, the POD activity peak appeared one month later, and kept at a low level. The cellulase activity was lower in the early storage stage and remained after 60 days Higher level, malondialdehyde content changes more moderate. Cold shock fruit juice granulation phenomenon delayed, the occurrence of a lesser extent.
