目的了解深圳市福田区市售糕点类食品卫生状况。方法抽取深圳市福田区糕点类食品制售企业56家进行现场卫生学调查,同时,现场随机抽取103份糕点类食品样品进行检验。结果糕点制售企业布局合理率为78.6%;原辅料索证率为12.5%;称量设备使用率为28.6%;从业人员膨化剂卫生知识知晓率为35.2%。所有糕点样品微生物检测项目均合格,不合格项目为铝。铝含量合格率为28.2%,铝含量平均检测值为227.1mg/kg,最高值1226.0mg/kg。西式糕点铝含量合格率显著高于中式点心;定型包装糕点铝含量的合格率显著高于散装糕点;不同生产(或销售)单位的糕点铝含量合格率有非常显著差异。结论深圳市福田区糕点类食品铝含量超标情况相当严重,应积极采取有效的干预措施。
Objective To understand the status of the market for bakery products in Futian District, Shenzhen. Methods Fifty-six cakes food manufacturers in Futian District of Shenzhen were investigated for on-site hygiene. At the same time, 103 samples of cakes were randomly selected for testing. Results The distribution rate of pastry production and sales enterprises was 78.6%. The raw materials and accessories rates were 12.5% and 28.6% respectively. The awareness rate of health knowledge about bulking agents was 35.2%. All cakes sample microbial test items are qualified, unqualified item is aluminum. Aluminum content pass rate of 28.2%, the average aluminum content was 227.1mg / kg, the highest value of 1226.0mg / kg. The passing rate of aluminum content in western pastry was significantly higher than that of Chinese pastry. The pass rate of aluminum content in pastry was significantly higher than that of bulk pastry. There was a significant difference in passing rate of pastry aluminum content among different producing (or selling) units. Conclusion The situation of excessive aluminum content in pastry food in Futian District of Shenzhen Municipality is rather serious. Effective intervention measures should be actively taken.
