稻米蛋白质含量的初步研究

研究了我国南方稻区早、晚籼主要推广品种的稻米蛋白质含量,以及在不同的栽培条件下,稻米蛋白质含量的变化。结果表明: 品种的稻米蛋白质含量平均为8%左右,早、晚稻之间没有显著差异,但品种间差异极显著。早稻中,品种的生育期与蛋白质含量成负相关。晚稻恰与早稻相反。 各品种在不同年度间蛋白质含量无显著差异,但品种间存在极显著差异。同一稻株不同穗及同穗不同部位的稻米,其蛋白质含量差异显著。 栽培条件对稻米的蛋白质含量有显著影响。生育后期,特别齐穗期追施氮肥,稻米蛋白质含量极显著增加,而且与施肥量成正相关。穗分化后,保持湿润灌溉到成熟和在适当稀植条件下,都能提高稻米蛋白质含量5—10%左右。 The protein content of rice in the main varieties of early indica and late indica rice in southern China was studied, and the changes of protein content in rice under different cultivation conditions were studied. The results showed that: the average protein content of rice varieties is about 8%, there is no significant difference between early and late rice, but the difference between varieties is extremely significant. Early rice, the variety of the growth period and the protein content is negatively correlated. Late rice just the opposite of early rice. There was no significant difference in the protein content between different varieties in different years, but there were extremely significant differences among the varieties. The same rice with different ears and ears with different parts of the rice, the protein content was significantly different. Cultivation conditions have a significant effect on the protein content of rice. During late growth period and special heading stage, nitrogen application increased the protein content of rice significantly, but also positively correlated with the amount of fertilizer application. Spike differentiation, to keep the wet irrigation to mature and under appropriate conditions of rare plants, can increase the rice protein content of about 5-10%.
