江阴市2009-2011年食源性致病菌监测研究

目的了解江阴市市售食品中食源性致病菌的污染状况,寻找本市引起食源性疾病的重点食品,对可能发生的食源性疾病进行预警。方法采集8大类食品,按国标及相关方法对7种食源性致病菌进行分离、生化及血清学鉴定。结果 604份样品中检出食源性致病菌90份,平均检出率为14.90%,8类食品中,以散装熟肉制品的污染最严重,其次为凉拌菜、生禽肉类;致泻性弧菌检出率为11.09%,以副溶血性弧菌为主,占致泻性弧菌的44.64%;金黄色葡萄球菌检出率为1.71%;单增李斯特菌检出率为7.32%;变形杆菌检出率为6.07%;未检出EHECO157∶H7、沙门氏菌、志贺氏菌。结论江阴市市售食品中食源性致病菌污染较为严重,散装熟肉制品、凉拌菜、生禽肉类是主要污染食品,应加强细菌性食源性疾病相关危险因子的研究分析,做好食品安全预警工作。 Objective To understand the foodborne pathogens in Jiangyin City, the status of food-borne pathogens, to find the city’s food-borne diseases caused by key foods, the possible occurrence of foodborne diseases early warning. Methods Eight kinds of food were collected. Seven kinds of food-borne pathogenic bacteria were isolated, biochemically and serologically identified according to the national standard and related methods. Results 90 samples of food-borne pathogens were detected in 604 samples with an average detection rate of 14.90%. Of the 8 types of food samples, the most contaminated bulk cooked meat products were the most contaminated samples, followed by salad and raw poultry meat; The detection rate of Vibrio alginolyticus was 11.09%, mainly Vibrio parahaemolyticus, accounting for 44.64% of Vibrio cholerae; the detection rate of Staphylococcus aureus was 1.71%; the detection rate of Listeria monocytogenes was 7.32%. The detection rate of Proteus was 6.07%. No EHECO157:H7, Salmonella and Shigella were detected. Conclusion The food-borne pathogens in Jiangyin City are more polluted. Bulk cooked meat products, cold-seasoned vegetables and raw poultry meat are the main contaminated food. The risk factors of bacterial food-borne diseases should be strengthened and analyzed. Good food safety early warning.
