硅橡胶膜生物反应器苹果原汁发酵研究(I)--微生物与膜器

基于细胞生长更新和产物原位分离的思想,设计了一套硅橡胶膜生物反应器进行苹果原汁的发酵实验,对2种自然选育的苹果酒酵母和一种工业化的酿酒高活性干酵母进行驯化,筛选出了一株较为理想的发酵菌株2401(驯化糖度为13%).发酵-渗透蒸发耦合实验表明,25 ℃时细胞密度24 h即可达到108 个/ml,经过渗透气化分离出产物后,细胞浓度有所提高;发酵96 h,残糖浓度下降到4%以下;膜渗透蒸发分离出的渗透液中轻组分浓度w(当量乙醇)最高可达28%,渗透通量超过1000 g/(m2·h).改变膜器结构和扩大膜面积后进行了发酵实验.自制的硅橡胶复合膜表现出优良的性能.结果表明,该膜生物反应器系统用于苹果原汁发酵在产物原位分离和发酵液封闭循环及反应条件控制等方面具有独特优点,在苹果加工制造苹果白兰地和发酵苹果汁软饮料方面具有工业开发前景.
