石刁柏(芦笋)是一种药食两用的优质蔬菜,雌雄异株,代谢产物可能不同。本文比较雌雄石刁柏嫩茎中蛋白质含量和超氧物歧化酶(SOD)活性的差异。 一、目的与材料方法 供试石刁柏(Asparagus officinalis L.)品种‘UC800’。早上8:00左右分别采收长约21cm的雌雄石刁柏嫩茎,流水冲洗,吸干后作3等分,上、中和基部。按Folin-酚试剂法测定蛋白质含量,以略改进的Dhindsa等方法测定SOD活性。使用岛津UV-2100型紫外-可见分光光度计,重复3次以上。 二、结果与分析 1.雌雄石刁柏嫩茎间蛋白质含量的比较 蛋白质含量的高低是衡量蔬菜营养价值的重要指标。从表1看出,嫩茎整段和各部分蛋白质含量都是雄的高于雌的。而雌或雄石刁柏的嫩茎自身比较,则分别均以上部蛋白质含量最高,中部次之,基部最低,各部分间差异显著,或极显著。
