目的:为了解上海市中小型餐厅所使用的消毒后塑封餐具的消毒质量,掌握其卫生程度。方法:应用公共场所微生物检验方法 GB/T18204-2000进行采样操作,依据GB14934-1994《食(饮)具消毒卫生标准》进行大肠菌群测定,依据食品安全国家标准GB4789.4-2010,GB4789.10-2010进行沙门氏菌和金黄色葡萄球菌检验。结果:20件消毒餐具中有6件大肠菌群阳性,检出1例金黄色葡萄球菌阳性,未检出沙门氏菌。其中一件样品同时检出大肠菌群和金黄色葡萄球菌。结论:大肠菌群阳性率之高和1例金黄色葡萄球菌的检出为我们敲响警钟,平时看似卫生的塑封消毒餐具同样不能安全使用,应引起广大群众注意,同时也望卫生监督部门加大监察力度,保障人民饮食安全。
Objective: To understand the disinfection quality of plastic tableware used in small and medium-sized restaurants in Shanghai and to master the degree of hygiene. Methods: Public places microbial testing method GB / T18204-2000 sampling operation, according to GB14934-1994 “food (drinking) with disinfection health standards” for coliform determination, according to the national food safety standards GB4789.4-2010, GB4789. 10-2010 Salmonella and Staphylococcus aureus tests. Results: There were 6 coliform positive samples in 20 disinfecting tablewares. One case of Staphylococcus aureus was positive, but no Salmonella was detected. One sample detected both coliform bacteria and Staphylococcus aureus. Conclusion: The positive rate of coliform bacteria and detection of Staphylococcus aureus for us sounded the alarm, usually seemingly sanitary plastic tableware can not be safely used, should arouse the attention of the general public, but also hope the health supervision department Intensify supervision and ensure people’s food safety.
