在过去两年里,海底捞餐厅已经成为餐饮界的一个热点现象,吸引了众多媒体的关注。北大光华管理学院两位教授对海底捞进行了一年多的深入研究,甚至派人“卧底”当服务员,总结出海底捞的管理经验。中国的企业,有很大一部分属于劳动密集型的中小企业,员工工时长、工作累、报酬低,劳资矛盾突出。但是,海底捞餐厅的经验告诉我们,即使是在火锅这样技术含量不高的行业,一样可以创造出令人羡慕的高昂士气、充满激情的员工团队和出色的业绩。
In the past two years, sea fishing restaurant has become a hot phenomenon in the catering industry, has attracted the attention of many media. Peking University Guanghua School of Management two professors carried out more than a year of in-depth study of sea fishing, and even sent “undercover” as a waiter, summed up the sea fishing management experience. A large part of Chinese enterprises belong to labor-intensive SMEs. Employees work long hours, work tired, pay low, and labor-management conflicts are prominent. However, the experience at Sea Fishing Restaurant tells us that even in less tech-intensive industries such as hot pots, we can create the same enviable high morale, passionate staff team and outstanding performance.
