为有效地控制肠道传染病,全面贯彻食品卫生法,防止食品污染,促使各单位全面达到食品卫生法的要求,作好食具洗刷、消毒有着十分重要的意义。我们于1983年对驻京十一个单位所属68个食堂、招待所、餐厅的餐具分期分批地采集样本328份,每份做了两个项目的卫生细菌学检验。以期有效地促进食品卫生工作,确保指战员的身体健康。结果一、驻京十一个单位,采样328份,细菌总数平均合格率为68.0%(细菌总数卫生标准≤500个/100Cm~2),平均超标率为32.0%;大肠菌群平均合格率为72.6%(大肠菌群卫生标准为阴性/100Cm~2),其平均超标率为27.4%。细菌总数和大肠菌群的总平均合格率为70.3%见表1。
In order to effectively control the intestinal infectious diseases, it is of great significance to fully implement the Food Sanitation Law, prevent food contamination, and urge all units to fully meet the requirements of the Food Sanitation Law. In 1983, we collected 328 samples of dishes from 68 canteens, guesthouses and restaurants belonging to eleven units in Beijing on a phased basis, and conducted hygiene bacteriological tests on two items each. With a view to effectively promote food hygiene, to ensure the health of officers and men. Results A total of 328 samples were collected from 11 units in Beijing. The average passing rate of bacteria was 68.0% (the total number of bacteria was less than 500 / 100Cm ~ 2), and the average rate of over-standard was 32.0%. The average passing rate of coliform bacteria was 72.6% (negative coliform bacteria standard / 100Cm ~ 2), the average rate of 27.4% exceeding the standard. The total average number of bacteria and coliform bacteria pass rate of 70.3% in Table 1.
