In discussing how to remove the bitter substances in citrus, American scientists found that numillin (a triterpene bitter) has anti-cancer effects. Experiments show that 28% of rats fed a potent carcinogen, nocturnal inhibition of gastric cancer formation. Another bitter chemical also has anti-cancer effects of lemon chemicals, but the effect is much worse. Researchers also found derivatives of nomelin and lemonosides.
