Lecithin, also known as soy lecithin or soy lecithin, is a complex phospholipid derived from soybean oil. In recent years, the world’s lecithin has developed rapidly with an annual output of 150,000 tons. At present, lecithin has been approved by the United States, Japan, Australia, some EU countries and the World Food and Agriculture Organization of the United Nations (FAO/WHO), and has been listed as an important nutritional supplement and “one of the nine longevity foods.” Japan and China’s Taiwan called lecithin as “brain gold.” Lecithin is widely used, not only emulsifying, but also has biochemical functions. It has been widely used in food, medicine and cosmetics industries. In the food industry, lecithin is the only natural food emulsifier.
