“斜日荒城红薯大,晓风山社绿柳多。”这是清代光绪元年何澂宇到台湾时,见当地红薯丰收而咏的诗句。地瓜在南方叫红薯、番薯、白薯。现在,人们提起地瓜,总把它当为充饥度荒的食品,其实地瓜在清代嘉庆年之前,还是“御用贡品”,每年由福建巡抚进贡数十篓“紫皮红薯”供皇家品尝。而且当时在北京亦为时令食品,据《燕京岁时纪胜》载:“京师十月以后则有栗子、红薯等物。红薯贫富皆嗜,用火煨熟,自然甘美”。这就是北京的烤红薯。地瓜煮熟吃后,有人感到肚胀和吐酸水,其实只要久煮一下,把里面的氧化酶破坏就不会吐酸肚胀了。
