【目的】研究华南原产的一种木本粮用果树苹婆可食部分——种胚的营养和人体保健性,为推广应用苹婆提供科学依据。【方法】以广西不同产地来源苹婆GXPN01和GXDX01为材料,对其种胚营养成分进行测定,并通过测定其多酚提取物的还原力和金属螯合力以及对DPPH自由基、羟自由基和超氧阴离子自由基清除能力,了解其抗氧化活性。【结果】苹婆种胚营养成分以淀粉和蛋白质为主,含有丰富的脂肪、维生素、多酚、氨基酸和微量元素(Ca,Fe,Zn),维生素C和维生素E含量明显高于其他维生素。此外,苹婆种胚多酚物质(尤其是类黄酮)含量高,并表现较强的DPPH自由基清除能力、还原力、金属螯合力以及羟自由基和超氧阴离子自由基清除能力。【结论】苹婆种胚具有较高的营养价值和包括较强的抗氧化能力在内的保健作用,苹婆是一种具有较高开发价值的木本粮用果树。
【Objective】 The purpose of this study was to study the nutrition and human health of the edible part of apple tree, a kind of woody grain originating in South China, to provide a scientific basis for the popularization and application of apple pie. 【Method】 The nutritional components of embryo of GXPN01 and GXDX01 from different origins in Guangxi were determined. The reducing power and metal chelating power of polyphenol extract and the effects of DPPH free radical, hydroxyl radical and Superoxide anion free radical scavenging ability to understand its antioxidant activity. 【Result】 The results showed that the nutritional components of the inbreds were mainly starch and protein, rich in fat, vitamins, polyphenols, amino acids and trace elements (Ca, Fe, Zn), vitamin C and vitamin E content was significantly higher than other vitamins. In addition, the polyphenolic substances (especially flavonoids) were abundant in the embryo, and exhibited strong DPPH radical scavenging ability, reducing power, metal chelating ability and hydroxyl radical scavenging ability and superoxide anion radical scavenging ability. 【Conclusion】 Embryo is a kind of fruit tree with high development value for woody grain with high nutritional value and health care including strong antioxidant capacity.
