牛蛙,学名棘胸蛙,一般体长约12厘米,皮肤粗糙,背面褐色,腹面灰白色,多生活于山区溪流中及附近岩石间,主要分布于江西、江苏、浙江、福建、广东、湖北、湖南等地,历来被视为珍稀野味.现各地均有人工养殖,大者可达500克左右.我国中医认为牛蛙性寒,有清火明目和滋补强身的功效.以牛蛙入馔,其肉质细嫩洁白,营养丰富,味美异常.主料:牛蛙2只800克辅料:芹菜100克 蛋清2个 西兰花500克调料:川盐、色拉油、红油、泡红椒、姜米、蒜米、料酒、白糖、豆粉、鲜汤、蒜苗各适量.
