目的目的建立一种操作简单、准确、快速的沙门菌定量方法,为食品安全风险评估提供数据支持。方法从河南省肉鸡专项监测点在不同环节采集60份生鸡肉,分别利用常规MPN法和改良MSRV-MPN法进行沙门菌的定量检测。结果两种方法的检测限均为0.3 MPN/g,常规MPN法计数结果有9份样品高于改良MSRV-MPN法,改良MSRV-MPN法计数结果有37份样品高于常规MPN法,有14份样品二者计数结果相等,经统计学分析(SPSS 10.1),Z=-4.019,P<0.05,差异有统计学意义,改良MSRV-MPN法计数结果高于常规法。结论改良MSRV-MPN法优于常规MPN法,值得推广使用。
Objective To establish a simple, accurate and rapid Salmonella quantitative method to provide data support for food safety risk assessment. Methods Sixty raw chicken meat samples were collected from different monitoring points of Henan broiler chickens. Quantitative detection of Salmonella was carried out by routine MPN and modified MSRV-MPN respectively. Results The detection limits of the two methods were 0.3 MPN / g, 9 samples were higher than that of the modified MSRV-MPN method by conventional MPN method, 37 samples were higher than the conventional MPN method by the improved MSRV-MPN method, and 14 The results of the two samples were equal, the statistical analysis (SPSS 10.1), Z = -4.019, P <0.05, the difference was statistically significant, improved MSRV-MPN method count results higher than the conventional method. Conclusion The improved MSRV-MPN method is superior to the conventional MPN method, which is worth promoting.
