一、湖南淡水鱼生产与加工现状: 1.生产形势。湖南是全国淡水鱼主产省之一,1985年以来淡水水产品产量占第四位。1991年虽受旱、涝灾影响仍达到56.35万t。1992年计划产量为60万t,中、长期水产业规划“八五”期末和二○○○年产量可达75万t和100万t。淡水鱼生产的持续发展将为我省农村奔小康,为广大人民群众提供丰富的水产食品。 2.加工业现状:随着水产生产的发展,市场的需求以及发展。“养殖、捕捞、加工并举”的水产业方针的贯彻,目前湖南水产品加工在品种、规格、包装方面也有新进展,加工技术和产品质量在不断提高。初步结束了以“冻原条鱼”、“大块规格”为主体的状态。冷冻品有“冻三去草鱼”(去鳞、鳃、内脏)、“冻鱼片”、单体冻名优鱼(鳜、鳊、鳖)等。熟食方便的“油酥鲜虾”、“油炸五香泥鳅”也有小规模不稳定生产(乡办厂),轻工食品厂有少量“鱼罐头”
