硬度是水果质量评价的一个十分重要的指标。与水果硬度有关的机械特性有破坏应力、破坏应变、破坏能和杨氏模量等。以前 ,人们常假设水果内各处机械特性基本一致 ,有关水果的非均质、各向异性机械特性的研究很少。本文研究了梨肉取样部位、方向、深度及朝向对破坏应力、破坏应变、破坏能和杨氏模量等指标的影响。试验表明 :样品的部位、方向、深度等显著影响 4个机械特性指标 ,而朝向对指标的影响呈极不显著。
Hardness is a very important indicator of fruit quality evaluation. The mechanical properties associated with the hardness of the fruit include destructive stress, damage to the strain, failure energy and Young’s modulus. In the past, people often assumed that the mechanical properties of fruit are basically the same throughout the fruits of the non-homogeneous, anisotropic mechanical properties of little research. In this paper, the effects of sampling location, direction, depth and orientation of pear meat on the indexes of failure stress, failure strain, failure energy and Young’s modulus were studied. Experiments show that: the location of the sample, direction, depth and other significant impact on four mechanical properties of indicators, and the direction of the impact on indicators was extremely insignificant.
