目的了解内蒙古地区膨化食品与面制品中铝的污染状况,及时发现食品中铝的安全隐患、为进行食品中铝的人群暴露评估提供依据。方法根据内蒙古自治区食品污染物监测计划要求,按照分层抽样的方法采集内蒙古8个地区的食品样本,按照《GB/T5009.182-2003面制食品中铝的测定方法》对样品中铝进行检测。结果共监测2大类食品共506份样本,铝检出值范围6.00 mg/kg~1010 mg/kg,均值131.3 mg/kg,检出率75.9%,超标率34.6%,超标食品主要为馒头、花卷、油饼及油条。结论内蒙古地区面制品中存在铝的污染情况,特别是油炸面制品中铝超标情况比较严重,应引起监管部门的高度重视。
Objective To understand the contamination status of aluminum in puffed food and flour products in Inner Mongolia and find out the potential safety hazard of aluminum in food products in order to provide the basis for the assessment of aluminum exposure in foodstuffs. Methods According to the requirements of food contamination monitoring program of Inner Mongolia Autonomous Region, food samples of 8 areas in Inner Mongolia were collected according to the stratified sampling method, and the aluminum in the samples was tested according to “GB / T5009.182-2003 Determination of Aluminum in Non-staple food” . Results A total of 506 samples of 2 kinds of foodstuffs were detected. The detection limit of aluminum ranged from 6.00 mg / kg to 1010 mg / kg with a mean value of 131.3 mg / kg, with a detection rate of 75.9% and an exceeding standard rate of 34.6% Hanamaki, cake and fritters. Conclusion The contamination of aluminum in flour products in Inner Mongolia, especially the excessive aluminum content in fried noodle products, is serious and should be paid great attention by regulatory authorities.
