目的对梭子蟹不同部位镉含量进行检测以了解其污染状况。方法将廊坊地区市售的梭子蟹可食部分分成蟹黄、蟹膏、胸肌和腿肌4个部分。经微波消解后采用石墨炉原子吸收光谱法进行镉含量测定,并对检测结果进行分析评价。结果廊坊地区市售的梭子蟹镉平均含量达到1.06 mg/kg,整蟹镉含量超标率达到73.1%,不同部位镉含量表现为:蟹黄>蟹膏>胸肌>腿肌;其中腿肌未发现镉超标现象,蟹黄镉超标率达到93.3%,最高超标近33倍;同一蟹体中的镉含量蟹黄与腿肌最高相差233倍。结论廊坊地区市售的梭子蟹蟹黄、蟹膏中镉含量超标严重,存在一定安全风险,应谨慎食用。
Objective To detect the cadmium content of different parts of the shuttle to understand its pollution status. Methods The edible parts of the commercially available shuttle pool in Langfang were divided into 4 parts: crab, crab cream, chest and leg muscles. After microwave digestion using graphite furnace atomic absorption spectrometry determination of cadmium content, and the test results were analyzed and evaluated. Results The average level of cadmium in commercial crabs reached 1.06 mg / kg in Langfang area, and the over-standard rate of cadmium in whole crabs reached 73.1%. The contents of cadmium in different parts showed as: crab yellow> crab cream> chest muscle> Phenomenon, crab and cadmium exceeded the standard rate of 93.3%, the highest exceeding the standard nearly 33 times; the same crab in the crab content of 238 times the highest difference between leg and leg muscle. Conclusions The cadmium content of Crab Crab and Crab Paste, which are commercially available in Langfang region, is extremely serious and poses a certain safety risk and should be used with caution.
