目的了解和掌握厦门市各类食品的重金属污染状况,为政府部门加强食品安全监管提供科学依据。方法 2008-2011年从厦门市超市和农贸市场随机抽取各类食品样品,采用石墨炉原子吸收光谱法和荧光光谱法检测食品样品中的铅、镉、汞含量,依据GB2762-2005《食品中污染物限量》、GB19643-2005《藻类制品卫生标准》和(EC)NO629/2008《欧盟食品中重金属限量标准》进行评价。结果共检测19类食品320份,总合格率为88.7%,各类食品中大米的合格率最低,仅为64.7%,其次是食用菌、藻类、叶菜类蔬菜合格率都在80%以下。结论不同种类食品受重金属污染程度不同,应重点加强对大米、藻类、蔬菜的卫生监督管理,以提高食品安全性。
Objective To understand and grasp the status of heavy metal pollution in all kinds of food in Xiamen and provide scientific basis for government departments to strengthen food safety regulation. Methods From 2008 to 2011, various food samples were randomly selected from Xiamen Supermarket and Farmers Market. The contents of lead, cadmium and mercury in food samples were determined by graphite furnace atomic absorption spectrometry and fluorescence spectrometry. According to GB2762-2005, Material Limit “, GB19643-2005” Hygienic Standard for Algae Products “and (EC) NO629 / 2008” EU Food Heavy Metal Limit Standards ". Results A total of 320 samples of 19 kinds of food were detected, with a total pass rate of 88.7%. The passing rate of rice in various foodstuffs was the lowest, only 64.7%, followed by that of mushrooms, algae and leafy vegetables below 80%. Conclusion Different types of foodstuffs have different levels of heavy metal pollution. Health supervision and management of rice, algae and vegetables should be emphasized to improve food safety.
