配菜,又称配料,就是根据菜肴的质量和营养要求,把各种加工成形的原料进行合理的配合,使其烹制出一盘或一套完整菜肴的操作过程。简单地说,配菜就是菜肴原料之间的配合。配菜在整个菜肴加工制作过程中有着十分重要的地位。从严格意义上说,配菜就是一个设计过程。配菜人员既要考虑前面加工形成的刀工,又要考虑烹调的技术;既要考虑菜肴颜色的搭配,又要考虑菜肴的价格,更要考虑到菜肴搭配后营养是否合理。因此,我们说配菜是菜肴制作过程中一个十分重要的环节。配菜是给菜肴定量、定质、定型的阶段。配菜的好坏,主要表现在颜色、气味、形状、质感等方面。下面就以这几个方面简单地说说配菜:
