2011年7-9月在浙江省江山市保安乡仙霞关毛竹林采集毛竹鞭笋,并对鞭笋的总糖、氮、磷、钾、粗蛋白、17种氨基酸等含量进行测试分析。结果表明,鞭笋的总糖含量为26.0~31.3 g.kg-1,氮含量为2.8~3.5g.kg-1,钾含量为3.3~3.7 g.kg-1,磷含量为0.18~0.58 g.kg-1,粗蛋白含量为17.2~22.1 g.kg-1,氨基酸总量为12.1~19.6 g.kg-1,胱氨酸未检出,其他16种氨基酸中含量最高的是谷氨酸,占氨基酸总量的14.9%~17.9%,其次是天门冬氨酸,占氨基酸总量的11.2%~14.3%,最低的是蛋氨酸,占氨基酸总量的1.0%~1.7%。必需氨基酸占氨基酸总量的比例为28%~32%。鲜味氨基酸占氨基酸总量的比例为27%~32%。
From July to September in 2011, bamboo whipped bamboo shoots were collected in the bamboo forest of Xianxia off in Bao’an Township, Jiangshan City, Zhejiang Province. The results showed that the total sugar content of bamboo whip was 26.0 ~ 31.3 g.kg-1, nitrogen content was 2.8 ~ 3.5g.kg-1, potassium content was 3.3 ~ 3.7 g.kg-1, phosphorus content was 0.18 ~ 0.58 g .kg-1, the crude protein content was 17.2-22.1 g.kg-1, the total amino acids was 12.1-19.6 g.kg-1, cystine was not detected, the highest content of the other 16 kinds of amino acids was glutamic acid , Accounting for 14.9% to 17.9% of the total amino acids, followed by aspartic acid, accounting for 11.2% to 14.3% of the total amino acids, the lowest is methionine, accounting for 1.0% to 1.7% of the total amino acids. The ratio of essential amino acids to total amino acids is 28% ~ 32%. Delicious amino acids accounted for the total amino acid ratio of 27% to 32%.
