目的:优选王瓜的微波-超声波联合提取工艺并考察其抗氧化活性。方法:以总三萜质量分数为指标,通过单因素试验和正交试验考察乙醇体积分数、提取时间、料液比、微波功率对王瓜提取工艺的影响;采用DPPH法、水杨酸法、ABTS法和FRAP法测定提取物的抗氧化能力。结果:最佳提取工艺条件为加50倍量90%乙醇于500 W微波-超声波联合提取6 min;王瓜提取物清除DPPH·、清除ABTS+·和Fe3+还原/抗氧化能力大于茶多酚但小于抗坏血酸,清除OH·能力均小于二者。结论:优选的提取工艺简便、快速,王瓜提取物具有一定的抗氧化性能。
OBJECTIVE: To optimize the microwave-ultrasonic extraction process and investigate its antioxidant activity. Methods: The effects of ethanol volume fraction, extraction time, solid-liquid ratio, and microwave power on the extraction process were investigated by single factor test and orthogonal test with the total triterpene mass fraction as the index. The DPPH, salicylic acid, ABTS method and FRAP method to determine the antioxidant capacity of extracts. Results: The optimal extraction conditions were extraction of 50 times the amount of 90% ethanol by 500 W microwave-ultrasonic extraction for 6 min. The removal efficiency of DPPH ·, ABTS + · and Fe3 + was greater than that of tea polyphenols but less than that of tea polyphenols Ascorbic acid, OH · capacity are less than the removal of both. Conclusion: The optimal extraction process is simple and fast, and the extract of King of melon has certain anti-oxidation properties.
