面对诸多省份致力发展地方特色餐饮的大势,本文从辽菜的历史沿革出发,全面疏理了辽菜的制作工艺、主要特征和品种分类等,进而阐释了振兴辽菜对于老工业基地全面振兴的重要意义,并在政策层面、改革层面、市场运作层面、技艺创新层面和人才培养等层面上,提出抓住机遇,乘势而上,全面振兴辽菜的措施。
In the face of the trend of many provinces devoting themselves to the development of local specialties and catering, starting from the historical evolution of Liaoning Province, this paper comprehensively neglected the production techniques, main characteristics and varieties of Liaoning cuisine, and then explained the general revival of Liaoning’s revitalization of old industrial bases . At the policy level, the reform level, the market operation level, the skill innovation level and the personnel training level, the paper puts forward the measures to seize the opportunity, take advantage of the situation and revitalize the Liaoning food in an all-round way.
