The jujube (Actinidia americana L.) was used as experimental material to study the physiological and biochemical changes of jujube (Actinidia japonica L.) with 2%, 4% and 6% of water loss during storage at the temperature of (20 ± 5) ℃. The results showed that appropriate dehydration treatment could effectively restrain the respiration, decrease the respiration intensity and delay the respiration peak of Actinidia deliciosa fruit, and also inhibit the release of ethylene, postpone the arrival of ethylene peak and respiration, and decrease the peak value.
