‘四川榨菜——颇辣’这句歇后语的意思是,四川产的榨菜相当地辣,从一个侧面反映了四川人爱吃辣。因‘颇’谐音‘泼’,此语常用来比喻处置事情很有魄力。 榨菜属芥菜科的茎球类菜种,因为在腌制过程中要压去鲜茎中多余的水分,故名之为‘榨菜’。榨菜脆嫩味美,是我国的特产,主要产于四川的丰都、涪陵,它与德国的‘甜酸甘蓝’、欧洲的‘酸黄瓜’,同为世界三大名咸菜。
