越来越多的材料证明硒是一种必需的微量元素。硒对机体的重要作用,不但从白肌病、渗出性素质、食饵性肝坏死或樱桃心等硒缺乏动物病的研究得以证明:而且从硒对蛋白质营养不良儿童的治疗作用、硒及维生素E与婴儿猝死的关系、硒与龋齿发生的关系等工作也显示出硒对人体的重要作用。近年来对硒的生理生化作用的研究,特别是对动物体内含硒的谷胱甘肽过氧化物酶(Glutathione Peroxidase)的研究,更进一步表明硒参与着保持机体正常功能的重要代谢过程。至于硒对有机汞等毒物的保护作用,硒对某些化学致癌物质的拮抗作用,以及人类环境中硒污染可能引起的影响等等都正日益受到重视。
