A、B、E型肉毒素原品及透析液有色氨酸特征紫外和荧光光谱,透析品在紫外区无吸收和荧光,原品红外光谱有色氨酸特征谱带,透析品则无,证明透析品(毒蛋白)分子中不含色氨酸,原品中色氨酸是肉毒梭菌特有的代谢产物。A、B、E毒蛋白分子具有双链螺旋结构,双链间由—S—S—键连接,在85℃加热时,双链并不破坏。B的毒性与硫醚键和螺旋结构相关,A、E的毒性与分子肽链间结构变化有关。
