花菇无黄蛋是湖南长沙汉族传统名菜,属于湘菜系。上世纪30年代曲园酒家以擅做此菜闻名,当时的《长沙指南》在介绍的几道名菜中,就有花菇无黄蛋。早在本世纪30年代即闻名遐迩。食材明细鸡蛋12个,水发花菇75克,时令菜心100克,鸡清汤250克,杂骨汤100克,酱油10克,湿淀粉、芝麻油各25克,味精、精盐各2.5克。胡椒粉0.5克,熟猪油90克。
