目的了解三门峡市大中型宾馆饭店自制熟肉制品的卫生状况,消除隐患,预防食源性疾患和食物中毒事故的发生。方法 2006-2008年4~5月份随机对辖区宾馆饭店自制熟肉制品进行抽样,检测项目为大肠菌群、菌落总数、致病菌(沙门菌、金黄色葡萄球菌)。结果 189份自制熟肉制品,合格132份,不合格57份,合格率为69.84%。结论大中型宾馆饭店虽然基本卫生设施齐全,但熟肉制品合格率不高,卫生状况不容乐观。原因为宾馆饭店各项规章制度落实不到位,操作人员未养成良好的的卫生习惯等。措施为建立健全并落实各项卫生制度,加强从业人员卫生知识培训,加大监督管理力度。
Objective To understand the sanitary conditions of homemade cooked meat products in large and medium hotels in Sanmenxia, to eliminate hidden dangers, prevent food-borne diseases and food poisoning incidents. Methods From April to May 2006, samples of homemade cooked meat products from hotels and restaurants in the area were randomly sampled. The test items were coliform bacteria, total number of colonies, pathogens (Salmonella and Staphylococcus aureus). Results 189 homemade cooked meat products, qualified 132, failed 57, the passing rate of 69.84%. Conclusion Although large and medium-sized hotels and restaurants are complete with basic sanitation facilities, the passing rate of cooked meat products is not high, and the health condition is not optimistic. The reason is that the implementation of the rules and regulations of hotels and restaurants is not in place, the operators did not develop good health habits. Measures to establish and improve and implement the health system, strengthen practitioners health knowledge training, increase supervision and management efforts.
