以“嘎啦”与“红富士”2个苹果品种为试材,通过对不同贮藏温度下果实理化及感官品质下降的动力学分析,并结合Arrhenius方程建立以相关品质指标为依据的货架预测寿命模型。结果表明:零级动力学能较好地描述在0~25℃贮藏苹果的硬度和颜色参数的变化。“嘎啦”采用色差b*建立的动力学模型针对10℃以下贮藏的果实预测准确率较高,相对误差小于15.00%;“红富士”b*与ΔE建立的动力学模型可以进行较低温度(0、10℃)下的贮藏期预测,相对误差介于6.79%~16.67%。
Two apple cultivars, “Gala” and “Red Fuji”, were used as experimental materials.
