目的探讨农村自办家宴聚餐食品安全监督管理对策。方法通过对农村自办家宴聚餐存在的食品安全隐患分析,提出农村自办家宴聚餐食物中毒预防的有效途径。结果农村自办家宴聚餐普遍存在卫生设施简陋、从业人员缺乏管理、原料采购把关不严、加工过程交叉污染、超负荷运作、餐具容器不消毒等食品卫生问题。结论农村自办家宴聚餐食品安全监管指导需要从完善制度、加强关键点控制、加强宣传教育和落实应急准备等方面深化管理。
Objective To discuss the countermeasures of food safety supervision and management in home-run banquets in rural areas. Methods Based on the analysis of hidden dangers of food safety in home-run dinners in rural areas, this paper puts forward an effective way to prevent food poisoning in home-run dinners in rural areas. Results There were common health problems in rural areas such as poor hygiene facilities, lack of management of employees, lax procurement of raw materials, cross-contamination of the processing process, overloaded operation and non-disinfection of tableware containers. Conclusion Guidance on the food safety supervision of self catering banquets in rural areas needs to be deepened in terms of perfecting the system, strengthening key points control, strengthening publicity and education and implementing emergency preparedness.
