职业教育的主要目的就是培养学生的实践动手能力,同样学生动手能力的强弱,是衡量技工院校教育教学质量水平的一个重要指标。目前,烹饪“模块化、一体化”教学在技工院校里备受推崇。所倡导的就是理论联系实践,以项目为主线,以就业为目标,以能力为基础的、贴近实际工作的教学理念,其目的就是为了提高学生的整体素质和实践动手能力。可以说,烹饪“模块化,一体化”的教学,打破了传统的理论、实践课程的界限,将烹饪专业理论知识融入到实践当中去。研究其教学的构建,必将对我国的技工类院校的烹饪教育事业起到积极的推动作用。
The main purpose of vocational education is to cultivate students ’practical ability, the same strength of students’ ability, is an important indicator to measure the quality of education and teaching of technical institutions. Currently, cooking “modular, integrated” teaching is highly respected in technical schools. Advocated by the theory of practice, the main line of the project, employment as the goal, based on ability, close to the practical work of teaching philosophy, the purpose is to improve the overall quality of students and practical ability. It can be said that the teaching of “modularization and integration” of cooking broke the traditional theory and practiced the boundaries of the curriculum and incorporated the theoretical knowledge of culinary expertise into practice. Studying the construction of its teaching will surely play a positive role in promoting the cooking and education in our country’s mechanized colleges and universities.
