针对目前馕坑存在容易造成胳膊烫伤、热量散失快和传统馕坑热效率低、污染严重等问题,研究一种采用燃气加热的滚筒式烤馕装置。通过对装置中正六方滚筒的结构设计、传动机构和温度控制系统的设计,确定了装置的工作方式,并根据装置的烘烤时间和温度对馕品质的影响进行了全因素试验。通过采用机械传动方式,改变了传统烤馕方法,实现了连续烤馕;温控系统的采用,减少了燃气用量,提高了能源利用率。烤馕试验结果表明:当电机转速为1.1r/min时,烘烤温度控制在220~230°C,8min可烤出色泽合适,口味最佳的面馕。
In order to solve the problems such as easy scalding, rapid heat dissipation, low thermal efficiency and serious pollution in conventional pit, there is a research on a drum-type grilling device with gas heating. Through the design of the structure of the positive hexagonal roller in the device, the design of the transmission mechanism and the temperature control system, the working mode of the device is determined and the full factorial test is conducted according to the influence of the baking time and the temperature of the device on the quality of the sliver. Through the use of mechanical transmission, the traditional method of roasting is changed to achieve continuous roasting; the adoption of temperature control system reduces the gas consumption and improves the energy utilization rate. The results of roasting test showed that when the motor speed was 1.1r / min, the baking temperature was controlled at 220 ~ 230 ° C, and the noodles with the best color and taste were roasted in 8 minutes.
