[目的]了解北京市丰台区直接入口食品中食源性致病菌的污染状况和污染水平。[方法]对丰台区11类餐饮业11种直接入口食品进行调查,检测方法按照GB/T4789-2003和WS/T9-1996进行。[结果]辖区内的83家餐饮业食品2148件调查中共检出124株(7.35%)变形杆菌、31株(1.84%)EPEC、2株(0.12%)单核细胞增生性李斯特菌、2株(0.80%)副溶血性弧菌、1株(0.05%)金黄色葡萄球菌。未检出沙门菌、志贺菌和EHECO157H7/NM;熟肉制品及凉拌菜中食源性致病菌检出率较高;大肠杆菌和变形杆菌检出率夏秋季高于冬季。[结论]直接入口食品中致病菌的污染比较严重,有针对性防范和控制各类食品致病菌的污染,是防止食源性疾病暴发的重要措施。
[Objective] To understand the pollution status and pollution level of food-borne pathogenic bacteria in the direct import food in Fengtai District of Beijing. [Method] 11 kinds of direct import foodstuffs in 11 catering industries in Fengtai District were investigated. The detection methods were in accordance with GB / T4789-2003 and WS / T9-1996. [Results] 124 (7.35%) Proteus, 31 (1.84%) EPEC, 2 (0.12%) Listeria monocytogenes were detected in 2148 foodstuffs in 83 catering industries in the area. 2 Strain (0.80%) Vibrio parahaemolyticus, Strain 1 (0.05%) Staphylococcus aureus. Salmonella, Shigella and EHECO157H7 / NM were not detected. The detection rate of food-borne pathogens in cooked meat products and salad was high. The detection rates of Escherichia coli and Proteus were higher in summer and autumn than in winter. [Conclusion] The pathogens in imported food were more polluted and targeted to prevent and control the contamination of various pathogenic bacteria in food. It is an important measure to prevent foodborne disease outbreak.
