Mung bean (Vigna radiata L.) is rich in D-chiro-inositol (DCI), vitexin, and isovitexin, which has beneficial effects on antidiabetic and inhibits the formation of advanced glycation end-products. In this study, near-infrared reflectance spectroscopy (NIR
